Hey ya’ll! I am LOVING sharing my easy, yet healthy random lunches that I come up with. It is fun for me to play around and create these and eating them is even better. Ha! This one is SO easy and took me under 10 minutes to make. This is what I used for my one serving and it was more than enough. I used two chicken sausage links but you could get away with one!
Ingredients:
8 oz. Zucchini Noodles “Zoodles” (frozen or fresh)
1 TBSP Olive Oil
Garlic Salt
Pepper
2 Roma Tomatoes diced
2 Pre-Cooked Chicken Sausage diced (I use the same kind as this recipe)
About 1/2 TBSP Parmesan cheese
About 1/2 TBSP Raw Shelled Hemp Seeds
Fresh Basil Leaves (slapping the basil or chopping it a little will release more scent & flavor)
What to do:
Heat olive oil in pan and add zoodles. Sauté 2-3 minutes and add garlic salt and pepper to taste.
Add in tomatoes and chicken sausage. Sauté until tomatoes are soft and chicken is warm.
Place in bowl and top with your cheese, hemp seeds and basil.
