Spinach & Goat Cheese Cauliflower Rice
1 bag of organic cauliflower rice
1/4 onion chopped
1 large garlic clove chopped
6 cherry tomatoes sliced in half
2 large hand fulls of fresh spinach
2 TBSP goat cheese
Salt and pepper to taste
Optional add ins: sautéed mushrooms, cooked copped chicken, cooked ground beef or sliced chicken sausage.
