1 cup almond flour
1/2 cup whole oats
1 Tbsp. baking powder
dash of salt
2 Tbsp cinnamon
2 mashed ripe bananas
2 Tbsp coconut oil
3/4 cup unsweetened almond milk
1 egg
1/4 cup pure maple syrup
1 diced apple
olive oil/coconut oil spray for mini muffin pan
Preheat oven to 350 degrees. Mix all dry ingredients. Add remaining ingredients ((other than apples)), mix together with a blender. Gently stir in apples. Spray muffin tin and disperse batter into each. Bake for 20 minutes ((bake longer if not in mini tins). Let cool before removing from tins. Store in refrigerator for 3-4 days.
Feel free to double or cut in half. Makes around 24 mini muffins!
