My mom made Chicken Garlic Pizza for us all the time growing up! Over the years, I have made it many times for my family but have made a few edits here and there to appease everyones taste buds. This time I actually tried out 3 different ways! I did one with half jalapeños, another on cauliflower crust (btw – not a fan, and I LOVE cauliflower but not with my pizza) haha. And then one the classic way my mom used to make it with very MINOR edits, mostly due to lack of ingredient in house..I will call these out below though!
Ingredients:
(For 1 pizza – double or triple for multiples)
1 lb Chicken breast chopped into bite size pieces
2 TBSP Soy Sauce
1/2 cup Green Onion
1.5 TBSP Minced Garlic
2 TBSP Olive Oil
2 TBSP Vinegar (I ran out of white and used rice vinegar this last time, I had to use double the amount but it worked great!)
1/2 tsp Crushed Red Pepper (double/triple this depending on spice level, my kids don’t notice it at this amount)
1/4 tsp Black Pepper
1 Italian Breadshell / Pizza Shell of Choice I used the Mama Mary’s brand.
1 TBSP Corn Starch
1 TBSP White Table/Cooking Wine (I add this, my mom doesn’t use this)
1/2 cup shredded Monterey Jack Cheese
1/2 cup shredded Mozzarella Cheese
1/4 cup Parmesan Cheese
2 TBSP sliced Almonds
1 Jalepeno Sliced (this is if you want it to be spicy)
Combine chopped raw chicken, 1/2 the green onion, garlic, vinegar, white wine, soy sauce, 1 TBSP of olive oil, red and black pepper in a large bowl. Let soak for about 30 minutes or so, letting the chicken absorb the flavor.
Preheat oven to 400 F .
Heat remaining TBSP of oil in large skillet. Add chicken to pan once hot while leaving the remaining juices in the bowl. I use tongs or a slotted spoon to do this.
While chicken is cooking, don’t forget to stir it, add cornstarch to remaining marinade juices. Once chicken is done, add this thickened mixture to the pan of chicken and continue to cook until sauce becomes thicker and almost like a paste.
Spoon onto bread shell, I usually spoon it on and move it around to get all of the bread shell covered in the sauce. Add jalapeños now if you want them.
Add shredded cheeses and bake for 12 minutes.
Open oven and add remaining green onion and almonds. Bake 2-3 more minutes to toast.
Let cool/set for about 5 minutes after removing from oven. Slice and serve!
I cooked the cauliflower crust according to package instructions. The center was pretty soggy until it cooled and set for about 30 minutes. Needless to say, I am just not a fan lol.
