These have become a huge hit in my house and an item that is requested weekly! I originally found the recipe on Pinterest but the recipe we tried stuck to the pan, didn’t have enough flavor or enough granola. So we edited it to fit our families likes and it is amazing!!! Another idea would be to make these in small popsicle molds with sticks!! It would be the same recipe except it would just take longer to freeze!
What you need:
24 oz vanilla greek yogurt (the large tub, we use the Publix brand)
Oats and Honey Granola
3-4 large strawberries, 1/4 cup blueberries or black berries (fruit is truly up to you!)
1/4 cup of Honey + a little extra to drizzle on top. (I use a local honey from Blue Mountain Beach, but any honey will do)
Shallow 9×13 dish – I use a baking tray.
To make it easier, I tried to take pictures of each step to show you what it looks like when I make it.
I also wanted to remind you guys – these do melt so they are not something you can put in your kids lunches or really take on the go. We eat ours at home pretty much as soon as we take them out of the freezer. The longer they sit out, they turn back into a yogurt consistency.
Step 1. Light cover your baking tray with granola. We put ours on the bottom because it keeps the yogurt from sticking to the pan. This almost gives it more of a crust but the yogurt does settle down and around the granola, it is just enough base to keep everything from sticking.
Step 2. I pour a little bit of the honey into the yogurt at a time. Splitting it into about 4 sections to make sure the honey is evenly distributed. I spoon out a huge dollop and spread it over the granola – add more honey, mix and do the same until all of the granola is covered like the image below. Once done, I drizzle a little bit of honey over the top of the yogurt.
Step 3. Sprinkle your chopped fruits over top the yogurt. I add a little bit more granola (mostly for looks). I love this part because you can customize to your families likes. Charli and I love ALL the fruit and Ryan and the boys do not. So I typically do ours half and half with the blueberries and blackberries.
Step 4. Put tray in the freezer for 2-3 hours to harden. Pull out and cut as you want to eat or cut up pieces and put in a sealed dish that you can keep in the freezer for up to two weeks. I find it’s easier if you pre-cut so you can kind of just grab and go when you want some!
