I came across this recipe on diethood.com and loved it! I changed a few things for my liking but over all it is very similar to her recipe!!! Hope you enjoy!!!!
- What you will need::
- 1 1/2 cups quinoa
- 1 cup of water
- 1 1/2 cups chicken broth
- handful of chopped sun dried tomatoes, the dried ones (not in oil)
- 1/3 cup crumbled feta cheese
- 2 tablespoons fresh chopped basil
- 3 tablespoons lemon juice
- 4 tablespoons extra virgin olive oil
- Pinch of Pepper
- In a medium sized saucepan combine the water and quinoa; bring to a boil. Once boiling reduce the heat. Cover and let simmer until quinoa is tender, about 15 – 20 minutes.
- Remove from heat and stir to fluff.
- Mix in the sun dried tomatoes, feta, and basil.
- Mix lemon juice, olive oil and pepper all ingredients in a small seperate bowl; whisk together until thoroughly mixed.
- Pour mixture over the quinoa, toss, and serve.
