Have you ever looked at the ingredients in store bought bread?? 😬 it’s not pretty!! Sourdough is made from just flour, salt and water and has live cultures that help you digest the gluten better than mass produced bread!! And once you get the hang of it, it’s SO easy!
First you’ll need a sourdough “starter” you can make one yourself or have a friend give you some of hers! It’s just equal parts flour and water that has fermented for several days! Once it’s bubbly and ready to use, you simply “feed” it by adding equal parts of your current starter, flour, and water! (Measured in grams) Then, let it do its magic for 8-10 hours before it’s ready to use!
For the bread:
Every recipe you’ll find is a little different and that’s ok! Experiment and find what you like best! You’ll need flour, an active Starter, water, salt, a big mixing bowl and a kitchen scale.
First, mix 100g of starter with 375g lukewarm water, 500g flour and 10g of salt in a large mixing bowl. Cover with a damp towel for about 30 minutes and then lightly perform a “stretch and fold” before covering it again. Do that 2-3 times every 30 minutes and then cover it and let it sit on your counter for 8-12 hours until it doubles in size.
When it’s doubled in size, take it out and form it into a ball and preheat your oven to 450. Score the top of the bread and cook (covered) for 20 minutes. Uncover and cook for 20-30 minutes until it reaches the desired color/texture!
