Ingredients (you can double this recipe, this makes about 2-3 servings):
4 oz pasta – I use red lentil or chick pea pasta
2 pre-cooked chicken sausage links (I use Publix GreenWise spinach and feta chicken sausage)
1 cup chopped/shaved brussels
1 roma tomato diced
1 carrot diced
1/2 small onion diced (about 1/4 cup)
olive oil
salt + pepper
Worcestershire sauce
Instructions:
In one pot bring pasta water to boil while you are chopping veggies and chicken sausage.
Heat olive oil in pan.
Once you add in pasta, start sautéing Brussels, carrots, and onions until tender. I usually add salt and pepper to these.
Once tender add in tomato and chicken sausage. Add in a little Worcestershire sauce (about a tablespoon give or take)
Drain pasta and add to pan. Mix everything together and add more Worcestershire sauce until everything is lightly coated. I typically add in more pepper.
Once everything is mixed and coated – serve 🙂
