This recipe is inspired by the, of course, PF Changs Lettuce Wraps. We LOVE them so much so I decided to try to make them on my own at home a few year ago – over the years, they have gotten better and better! Also, this recipe is to feed 5-6 people, feel free to cut in half!
Ingredients:
2 lbs of ground chicken
1 TBSP Minced Garlic (fresh or pre-minced)
3 Green Onions (white and green part)
6 TBSP (about 1/2 jar) Hoisin Sauce
1 TBSP Rice Wine Vinegar
Ginger Root (I use the entire root/about the size of my palm)
1 TBSP Siracha (I would add more if there are not kids eating it)
1/3 cup Soy Sauce
2 small cans of Water Chestnuts
Black Pepper (I don’t always add this, just if you want a little)
Butter Lettuce (it is not always available so typically use romaine)
Olive Oil
Option – if you do not like water chestnuts, these are not going to make or break your recipe – I just really love them, I chop even the diced ones up a little smaller typically
Recipe:
-Chop and mix everything except the chicken and lettuce (obvi) into a big bowl.
I will say – I don’t have time to be crazy about my chopping all the time, but, if you have picky eaters, the smaller you chop everything the less likely they are to notice any of the “green (onions) or white stuff (water chestnuts or ginger)” in the mixture.
– Once everything is mixed, stir in the chicken until it is completely covered in the sauce. Let it soak while you do the next step.
-Separate, wash, trim lettuce and lay out to dry.
-Start your rice if you are making kids version.
-Add olive oil and preheat a pan to medium high heat.
-Add chicken and sauté until completely cooked, I then put it in another big bowl to put at the kitchen table.
I pre-make the kids plates, but let the adults make their own lettuce wraps as they eat. I also keep extra siracha at the table for Ryan and I!
To make it kid friendly, simply make some Jasmin rice and put chicken filling on top!
It is so good! You can also mix a little rice in with your lettuce wraps if you arent trying to do a low carb diet!
