Pancakes are my absolute favorite breakfast in the entire world. Banana pancakes, chocolate chip pancakes, blueberry pancakes. You name it – I will devour them instantly! That being said, my biggest complaint about them is that they do not stick with me. About 45 minutes to an hour I am already getting hungry! I have found a substitute to fix this issue and also makes them even fluffier! Insert fairlife® whole Ultra-filtered milk. The reason I choose to use fairlife® whole Ultra-filtered Milk is because compared to regular or organic whole milk is for 3 reasons. It has more protein, less sugar and more calcium. I am talking 50% more protein. 13g of protein vs. the 8g for organic milk, and 7g and 1g other milks have and half the sugar!!! I actually talk about why we choose to always drink and use fairlife® Ultra-filtered milk in this post as well. Not to mention, the extra protein makes the pancakes actually stick with you!
For Christmas I like to keep our food – well, Christmas themed. I love creating little memories for our children to look back on during the holidays. They get so excited when a normal pancake turns into a magical Christmas pancake that ‘Santa eats in the North Pole to get prepared to deliver all of the toys to boys and girls!’ This is where I came up with our peppermint protein pancakes! It was kind of a risk the first time I did it- had no clue how they were going to turn out. But everyone loved them so thankfully they stuck around!
So, depending on your timing / or how many children you have you can make these pancakes two ways. One is the delicious homemade from scratch way. And the other is from a premixed pancake box. I’ll post the from scratch way first and then the quick and simple way afterwards!
CHRISTMAS MORNING PEPPERMINT PROTEIN PANCAKES – From Scratch
1 3/4 cup all-purpose flour
3 1/2 tsp baking powder
1 tsp salt
1 tbsp sugar
1 1/4 cup fairlife® whole ultra-filtered milk
3 tbsp melted butter
(in a plastic bag – crush one candy cane and sprinkle on top of pancakes as soon as you pour it in the pan)
Blend/Mix until smooth. Melt coconut or vegetable oil in the pan before pouring mix. Pour mix and sprinkle candy cane pieces on top. Flip once bottom side is golden brown and the top has layer has thickened. Brown both sides and serve warm with syrup and/or whip cream.
I only put the candy cane pieces on one side for two reasons. It is a strong flavor and you do not want it to be over powering as well as they melt and become sticky and can stick to the pan. Avoid this by keeping plenty of coconut oil or oil of your choosing!
Okay, and for the cheat sheet. Ya’ll it is okay to not have time to make pancakes from scratch every time! Go easy on yourself. If it is not a holiday morning or special occasion – this is typically how I make ours too!

Get a box of any brand of pancakes that you love.
Follow instructions on the box. But – instead of using water – substitute for fairlife® whole Ultra-filtered Milk
(in a plastic bag – crush one candy cane and sprinkle on top of pancakes as soon as you pour it in the pan)
